COLD CUCUMBER SOUP

Now that the weather is getting warmer and some gardens are beginning to produce, I would like to share my favorite recipe for cold cucumber soup. The words "cold soup" to some, might conjure up a vision of greasy glop but......not so! This is delicious and so simple and healthy too!!!

  1. Place all ingredients in a blender and process til blended. Chill, covered.

It keeps for several days. Yield: 6 to 8 servings. I lived on this the summer after my surgery. It was easy to swallow as it was soft but with a little bit of texture so that it did not stick in my throat/stomach. Enjoy...... Ellen
