RECIPES FROM OESOPHAGEAL PATIENTS

EGG RECIPE

I found this someplace and just tried it. It was written for 3 using 3 eggs and I changed it to 1 egg, enough for 1. Use this as a guide, 1 egg per person, or two if a bigger eater. It was very good.

Scrambled Eggs with Cheese (serves 1)

  1. Combine above
  2. Melt 1 heaping Tablespoon butter over low-med heat til pan is HOT.
  3. Add mixture
  4. Shake pan, move with fork, but do not "scramble". Should be lumpy. Cook over low heat til set.

This is 'moist', lots of butter helps with moistness. Very tasty. Can add more or less cheese and/or chives as desired. Enjoy! I am looking forward to the cookbook.
