RECIPES FROM OESOPHAGEAL PATIENTS

ELLEN'S BITCHIN' CHICKEN

A recipe that my husband and I enjoy very much and that I find that I can digest easily. This is another chicken recipe but I think a good one. I found that after my surgery, any kind of chicken would leave me with a horrible greasy taste in my mouth in the morning but did not want to give up the flavor of the skin. I found that by thawing chicken about half way and removing the fat from under the skin was much easier than doing this when completely thawed. The last thing that I want to do is give up the foods I enjoy, if possible! So, here is my bitchin chickin!!!!!!

  1. Wash chicken pat dry.
  2. Remove as much fat as possible from under skin while still half frozen.
  3. Melt butter in pan and stir in remaining inredients.
  4. Roll chicken pieces in mixture to coat
  5. Arrange with meaty side up in a single layer in same pan.
  6. Bake at 375 for 1 hour and baste occasionally.

Chicken will have a rich glaze. Bon apitite........Ellen
