RECIPES FROM OESOPHAGEAL PATIENTS

IKE'S YUMMY POLENTA

Hi Folks, This is one of my favorites------it can be a meal, a side dish, breakfast or whatever. And it is easy to prepare.

  1. Bring water , milk and butter to boil
  2. Slowly pour in polenta stirring vigorously with a whisk until incorporated, add salt and parmesan -----turn heat down a bit,,,,continue to stir til mixture is very very very thick---if you stop it may become lumpy
  3. Pour into pyrex dish, let set til cool, slice into serving size pieces and reheat in Microwave, or you may serve while warm

Note: For a very good variation! at step # 2 add two cups of ham minced very fine in a food processor

Optional: serve with parmesan and, marinara sauce or red pepper sauce.(see Miscellaneous for red pepper sauce)
