Mortals! Hear the sacred cry; |
RECIPE Argentinian Stew 2 lb stewing steak cubed, 1 lg onion chopped, 2 cloves garlic crushed, 3 tbs olive oil, 2 lge tomatoes chopped, 1 lge green bell pepper chopped, salt, pepper, 1 tsp sugar, 1 cup dried apricots, 3 white potatoes peeled and diced, 3 sweet potatoes peeled and diced, 2 cups beef stock, 1 pumpkin, butter or margarine melted, 1/4 cup dry sherry, 1 can sweetcorn drained Brown beef in oil with onion and garlic. Add tomatoes, green pepper, 1 tsp salt, 1.2 tsp pepper, sugar, apricots, white potatoes, sweet potatoes and stock. Cover and simmer 1 hour. Cut top off pumpkin and scoop out seeds. Brush inside with butter and sprinkle with salt and pepper. Stir sherry and corn into stew and spoon into punpkin shell. Place shell in shallow pan and bake at 325F for 1 hours, or until pumpkin meat is tender.
