Stewed pumpkin

1 lb pumpkin, 2 tbs butter or cooking oil, 1 clove garlic crushed, 2 spring onions finely chopped, salt and pepper

Peel and seed the pumpkin and cut into one-inch dice. Place in a pan along with butter, garlic and spring onions. Cook over medium heat, stirring, until the butter melts. Cover, reduce the heat and cook until the pumpkin is fork tender. Sitr the mixture occasionally so that it does not stick. Season and cook for three more minutes. Serve warm.

Wash down with: Antartica beer
