A good group for a home team. I think they might get through the group - but only just - and, if they do - they won't go any further (surely?).

RECIPE

Party Sushi Rolls

Rice: 2 cups white, short-grain rice, 3 cups water, 3 1/2 tbs rice or white vinegar, 1 tbs sugar, 1 1/2 tsp salt, 1 pk Nori seaweed, 1 bamboo mat

Filling: 1 cucumber cut into strips, 1 avodado cut into strips, fresh cilantro minced, 2 oz daikon radish cut into strips, 2 oz pickled ginger, 4 oz small shrimp, 4 oz prosciutto

Cook rice in water for about 25 minutes or until all liquid is absorbed. Spread evenly over the bottom of a large bowl. Mix vinegar, sugar and salt together and sprinkle it over rice. The rice should remain quite dry. Place one sheet of mori seaweed on the bamboo mat. Spread 3/4 cup rice onto seaweed and flatten with the back of a spoon. Leave 2 cm uncovered at each end of sheet. Place all the ingredients at centre. To form roll lift one end of the mat and begin to roll, compressing the seaweed. use the mat to help form the roll (it may be difficult at first to keep the mat from rolling with the seaweed). Moisten end of seaweed with a small amount of water to seal the roll. Cut into rolls 1/2 inch thick.
