RECIPE

Sopa Paraguaya

4 oz lard, 2 onions chopped, 5 cups water, 1 tsp salt, 2 lbs cornmeal, 5 eggs, 1 cup cream, 1/4 lb soft cheese grated, 2 tsp baking powder, 1 tbs butter

Melt the lard in a pan, add onions and saute, then add water. When the water begins to boil, add salt and cornmeal, stirring constantly. Remove from heat and beat in eggs, cream and cheese (reserve a little cheese for the topping). If batter does not pour readily, add more cream. Now add baking powder. Pour into a greased tin about 10 in by 12 in. Garnish with butter and cheese. Bake in 375F oven for 40 minutes or until golden brown.

Wash down with: Caña (cane alcohol)
