RECIPE Lamb Pastries with Pine Nuts 1 1/4 cups plain flour, 1/2 cup butter or lard, 2 tsp salt, 1/2 cup cold water, 1/2 lb lean lamb mince, 1 onion finely chopped, 1/4 cup pine nuts, 1/4 tsp pepper For the pastry, sift flour with one tsp salt and cut butter in finely. Add water gradually to make a soft dough. Rollout 1/8 inch thick on a pastry board. Cut into rounds with a biscuit cutter. For the filling, saute the onions in two tablespoons of butter until they become glossy. Add meat, nuts, one tsp salt and pepper. Fry, stirring occasionally, until meat is browned. Pour off excess fat. Check seasoning and add salt and pepper as required. Put a teaspoon of filling in the centre of each pastry. Fold over in half and pinch edges togehter. Fry in deep fat until brown. Drain on absorbent paper. Can be served hot or cold.
