RECIPE Lamb & Apricot Kebabs 2 lb lamb cut in 1 in cubes, 1 lb fatty pork cut in 1/2 in cubes, 2 onions finely chopped, 1 tbs curry powder, 1 clove garlic crushed, 4 tbs oil, 2 tbs sugar, 2 cups white wine vinegar, 2 tbs apricot jam, 2 tbs cornflour dissolved in 2 tbs red wine, 1/2 lb dried apricots, 1/2 cup sherry. Rub a large china or glass bowl with garlic. Sprinkle lamb and pork with salt and pepper and place in bowl. Heat the oil in a pan and add the ionions, curry powder and garlic and saute until golden. Dissolve cornflour in red wine and add to the pan, along with the sugar, vinegar and apricot jam. Simmer, stirring constantly, until mixture thickens slightly and clears (about three minutes). Cool and add to the meat, mixing it in well. Leave to marinate for a day. Meanwhile, marinate the apricots in the sherry overnight. Drain meat from the sauce. Thread the lamb, pork and apricots alternately onto skewers. Cook over charcoal or under a grill brushed with oil until browned on all sides. heat the remaining sauce until piping hot and serve separately with yellow rice and chutney.
