RECIPE

Gravlax

2 1/2 kg fillets of centre-cut salmon with skin on; 3/4 cup of sugar; 1/2 cup of salt; 15 white peppercorns, crushed; 1 large bunch dill (do not chop)

Remove any small bones from the fillets. Mix the sugar, salt and pepper in a bowl. Cover the bottom of a baking dish with dill. Rub half of the sugar and salt mixture into both sides of the first fillet and lay it skin side down on the dill. Cover with more dill. Repeat with the second salmon fillet. Cover in a cling-film wrap, place a cutting board with a heavy weight on top, and marinate in the refrigerator for two to three days, turning the salmon over at least once a day. Scrape the marinade off and slice the fillets very thinly. Serve with a mustard sauce.
